First find your subject...like here, this one sunning itself on a stump on Tai Mo Shan.

Then move around so you remove the background clutter and get a better plane so you can use have the aperture wide open for a shallow depth of field, like below...

and finally, crop it and you have a lovely wildcreature portrait, and you can see the skin about to shed on the body.
