The great egret (Ardea alba), also known as the common egret, large egret, or (in the Old World) great white egret or great white heron.

Here one takes a small fish.

i love watching these large Egrets, often seen standing in shallow water, waiting for fish or other small animals to come within range of their spear like beak.

However, they can also fly and using their long neck with great dexterity pluck small fish out of the water, near the surface, like in this series of pictures.

A great place to see them is near the pier at Sai Kung, where they are often close to the shoreline.
